BELOVED CHELSEA AREA RESTAURANT SOM BO LAUNCHES A PLANT BASED POP UP FOR THE NEXT MONTH, FEATURING A STREAMLINED PLANT BASED MENU AND NEW OFFERINGS
Chelsea, New York, NY – N ov. 19, 2020 – The number of New Yorkers with plant based diets is growing by leaps and bounds, and innovative restaurants in New York have been quick to adapt to evolving preferences. One of these “vegetable-forward” stand-bys, Som Bo, has taken it to another level: curating an entirely new vegan-only pop up.
Beginning on November 18th, Chelsea-based Asian fusion restaurant Som Bo will be debuting Som Bo – Plant Based Edition, a new virtual pop up restaurant in collaboration with Papaya, a new discovery platform for ordering the best plant-based options at restaurants throughout New York City. In addition to the robust plant based menu, new dishes will be announced throughout the month.
Som Bo was already known by its customers for its flavorful vegetable tapas and its alternative protein dishes, like its Mushroom “Kalbi Steak” bowl, a blended mushroom and tofu “steak” cooked with Korean BBQ seasoning.
“I experimented with veganism for three years and worked on an organic farm, so I’ve seriously played with alternative proteins and vegetables,” said Jim Carapezza, Som Bo’s head chef. “We have been a destination for plant based dishes for years, and this is our chance to lean into this aspect of our identity – and I’m just glad to develop some new creative dishes, which we’ll be introducing during the pop up.”
Som Bo’s team worked with Papaya’s culinary team to enhance its plant based offerings and source new ingredients. The menu is available for delivery and pickup at sombo.orderpapaya.com. Papaya will be announcing new collaborations through the year’s end and rolling out a more robust menu of offerings in the new year.
